Calypso EATinG Celebration

LemonGrass, along with other local restaurants (Pike’s, Pump House, Ivory Jacks, and more), participated in EATinG (Engaing Alaskan Teens in Gardening) Celebration. This is Calypso largest fundraising event for Calypso’s Schoolyard Garden Initiative.   We led Student Gardeners in preparing ‘Fresh Spring Rolls’, ‘Yum Pak Salad’, and ‘Pad Thai Pak’ made with school-garden grown produce serving to over 300 attendances in their 1st annual EATinG Celebration on July 31st at West Valley Auditorium.

“Calypso’s Schoolyard Garden Initiative is an innovative network of school gardens in Fairbanks. These gardens double as educational gardens during the school year and food production gardens, maintained by teenagers, during the summer. We have five active schools participating in our program including; Pearl Creek Elementary, Woodriver Elementary, Hunter Elementary, University Park Elementary and Effie Kokrine Charter School. In addition to these there are two schools in the development stage including: Randy Smith Middle School and Monroe Catholic School.” - Colby C., Pearl Creek School Garden Supervisor.
